Sourdough Bread

Old world sourdough bread. Made with three ingredients: flour, water, and salt. The flour is organic non-gmo and kosher. I use a 90/10 blend of unbleached white and whole wheat. I use a Diamond crystal kosher sea salt and filtered water. The starter is a decades old domestic starter augmented with a 255 year old French starter. While this is not gluten-free I do cold ferment the dough for at least 24 hours, often up to 48 hours, which has been shown scientifically that long fermentation of sourdough bread breaks down gluten and will allow some gluten intolerant people to consume it without issues.
